Cinnamon Roll Cookie Recipe

Ingredients

For The Filling

  • 2 c of soft dates
  • 3 tbsp cinnamon
  • 1/3 c milk of choice
  • 2 tbsp coconut oil

For The Dough 

  • 2 c oat flour
  • 1 c almond meal
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 4 tbsp maple syrup
  • 1/2 c melted coconut oil

Step By Step Directions

  1. Preheat your oven to 350 degrees F.
  2. Add the filling ingredients into a blender and blend on high until you have a smooth mixture that is not too sticky.
  3. In a large bowl, mix together the oat flour, almond meal, cinnamon, and salt. Pour in the maple syrup and coconut oil and kneed into a dough.
  4. Roll the dough out into a rectangle (about 1/4” thickness) between two sheets of parchment paper.
  5. Spread the cinnamon-date mixture evenly over the rolled dough, then carefully start rolling into a tight cylinder.
  6. Place in freezer for 15-30 minutes, then cut into cookies.
  7. Arrange on a baking tray lined with parchment paper and bake for 15-20 minutes until the edges are golden brown.
  8. Leave to cool completely and enjoy!
